Irish Pub Nachos
5 slices bacon, fried & crumbled
4 medium potatoes, scrubbed & sliced
3/4 c corned beef, diced
1 c shredded Swiss cheese
3-4 Tbsp diced pickled jalapenos
1/2 tsp salt
1/2 tsp pepper
1/2 c tomatoes, diced
1/4 c green onions, diced
1/2 c sour cream
1. Preheat oven to 375 degrees. Fry bacon until crisp and remove to paper towels, reserving fat. Crumble when cool.
2. Fry potatoes in bacon fat until tender and golden on both sides. Place on an oven-proof plate and season with salt and pepper.
3. Dice corned beef and place on potatoes, skipping outer rim of potatoes. Sprinkle bacon over corned beef. Bake for 15 to 20 minutes.
4. Sprinkle cheese over meat and return to oven and heat until cheese is melted. Top with jalapenos, tomatoes, green onions and sour cream. Enjoy!
